Chocolate Hazelnut Truffles


These little beauties don’t really need an introduction, but boy do they ever deserve one. A roasted hazelnut center, surrounded by chocolate hazelnut cookie dough, rolled in crunchy rice cereal, dipped in dark chocolate and then topped with chopped hazelnuts. I’m not going to lie, these are a little time consuming to make, but they’re worth every minute. Especially when you see how healthy they are:

All the flavour and texture of the traditional Ferrero Rocher Truffles without all the processed ingredients and refined sugars.

  • 20 whole hazelnuts
  • 1/2 cup + 2 tbsp brown rice flour

Who Says Vegetarian has to be boring?

I’ve been vegetarian for over 10 years now, and I’m about 90% vegan (I don’t eat things like cheese, butter etc) but I love my greek yogurt and nonfat milk.


Anyways, tonight I was making lots of yummy food for the week, aka runner fuel 🙂 and I thought I’d share 2 of my favourite recipes:


Brussel Sprout Salad

Raw Brussel Sprouts, about 10, cut into ribbons

1 C Crumbled plain or Herbed Goat Cheese

1 C. Blanched Almonds

Lots of Fresh Pepper


Extra Virgin Olive Oil

Carmelized Leeks (In Olive Oil)


Just mix everything together. So so so yummy. 



Broccoli Asian Salad

Broccoli Slaw (In bags pre cut from Safeway/Vons, Trader Joes etc)

2 Tbsp Soy Vey Very Teriyaki Sauce
